I’ve been seriously craving some warm fall comfort foods, especially after going pumpkin picking with my kids over the weekend, this recipe is beyond… beyond…I mean did you know you could actually make something so healthy and follow clean eating perfectly and it could come out so amazingly gooey and good? This can be made for a breakfast, brunch or desert or an anytime snack! its loaded with good for you slow digesting oatmeal and its sure to keep you full and satisfied.
Serving Size: 1
Ingredients:
Filling:
- 1 Apple, Sliced
- 1/8 tsps Organic Vanilla
- Cinnamon
- Rolled Oats (oatmeal)
- 1 Packet of Stevia (or you could use maple syrup)
- Walnuts
Topping:
- 1/2 Red container of plain 0% or 1% Greek yogurt
- 1/2 packet of Stevia (more or less to taste)
- 1/8 tsp Organic Vanilla
Directions:
Boil water to-make your oatmeal while you slice your apple. layer on a baking sheet (I lined mine with foil) and sprinkle with Cinnamon. Bake at 375 degrees for 10 minutes.
cook your oatmeal until done and measure out one yellow container full.
Stir into your oatmeal, 1/8 tsp of pure vanilla, and 1/2 a packet of stevia (or drizzle a little maple syrup, I used stevia) sprinkle with more cinnamon and then mix in your cooked apples. top with an orange container of chopped walnuts and bake for an additional 10 minutes at 375 degrees.
While that is baking mix together all the ingredients for the topping and once done add to the top and ENJOY!
