It’s no secret I LOVE Chinese food, well I don’t have to give up the flavors and meals I love, I just make it myself and I make a healthier version, for this I took prepackaged organic chicken strips, I get them frozen at Costco, with sliced fresh pineapple and sliced red peppers, I sautéed in the pan with a little cooking spray. The juice of the pineapple coats the chicken and veggies for a sweet and savory combination. I served over a quinoa and brown rice mixture and dipped the chicken in a balsamic vinegar glaze, you can use the recipe in 21 Day Fix Extreme or just whip together balsamic vinegar with Dijon mustard (add a little honey if you want to use your orange container) until you get the desired spicy to sweet combo.
