This yummy breakfast bread idea is perfect for an on the go filling sweet bread you can take with you to work!, simply heat up a slice in the microwave when you are ready to reheat, keep stored in the refrigerator! Also great as a desert option or for when you have guests, you could make it a head and bake it when ready!
I originally found a similar recipe while browsing for some desert ideas, I decided to try it out and with a little tweaking it was so good I knew I had to share it with all of you! Hope you enjoy this as much as I did! Also BONUS, my 4 year old LOVED this, and that is really the true test because no one is more picky than my kids.
Sticky Cinnamon Bun Bread

- **Cream Cheese Filling**
- 3 oz (6 tbsp) Cream Cheese, Softened
- 1 tbsp Heavy Cream
- 1.5 tsp Stevia or Granular Sweetener Like Swerve.
- 1 tsp Vanilla Extract
- 1 tbsp Chopped Walnuts
- **Cinnamon Filling**
- 4 Tbsp Unsalted Butter, Softened
- 2 tbsp Cinnamon
- 3/4 tbsp Stevia Powder (or 1/3 cup Other Sweeter)
- 1 tbsp Chopped Walnuts
- **Dough**
- 2 1/2 cups Mozzarella Cheese
- 3 oz Cream Cheese
- 2 Eggs
- 3 tbsp Coconut Flour (or 1 1/4 cups Almond Flour)
- 1 tbsp Baking Powder
- 1 tsp Stevia Powder
- 1 tsp Vanilla Extract
- **Glaze**
- 4 Tbsp Unsalted Butter
- 2/3 cup Swerve Confectioners
- 1.5 tsp Cinnamon
- 4 tbsp Water ( 1/4 cup)
- 1/2 tsp Vanilla Extract
Instructions
Dough

Microwave the mozzarella cheese and cream cheese for 1 to 1.5 minutes

Stir until combined.

Stir in the eggs.

Add the rest of the dough ingredients and mix well.

Wet your hand and knead the dough. If it gets crumbly you can reheat it. If the dough is too sticky add a little flour like I did in the video.
Put it Together!

Preheat the oven to 375 F.

Divide the dough into two equal portions and flatten with a rolling pin or your hands.

Spread the cream cheese filling over the dough, Sprinkle the walnuts.

Roll the dough and set aside.

Spread the cinnamon filling over the dough, Roll the dough.

Twist the two logs around each other in a loaf pan.

Bake for about one hour (Adjust the time as neccessary). Cover with aluminum foil after the first 20 minutes.

Allow 15 minutes to cool in the pan, and then remove from the pan and let cool completely on a wire rack.

Once cooled to touch spread the glaze on top.

Blend together all the glaze ingredients until smooth and microwave for 10 to 20 seconds, stir. (find Swerve here.)
