Creamy delicious healthy Shrimp Alfredo that’s good for you? YES. I am on a mission to make all my favorites taste amazing all while sticking to my clean eating program with 21 Day Fix, that’s what led me to create this insane recipe. Oh and there’s no cheese in this recipe! You can adjust the quantities of each ingredient to match the containers you have left and it will still taste amazing, this is one of those dishes that you really can customize.
If you follow 21 Day Fix (or Extreme Countdown to Competition) and you’re eating dairy, this is a perfect option for you! And BONUS, my husband was obsessed. This is also perfect to make for dinner parties and not explode your waistline. If you aren’t eating dairy, omit the greek yogurt and while it wont be an alfredo it will still be a delicious dish.
Servings: 4
21 Day Fix: 2 Red 2 tsp
Ingredients:
- Shrimp (Raw, Tail on, 1.5 lbs)
- 8 tsp Olive Oil
- Himalayan Salt
- Garlic Powder
- 1 Lemon
- Crushed Red Pepper Flakes
- Plain Greek Yogurt
- Old Bay Seasoning
Directions
Measure out 8 tsp of olive oil in the pan, let it get hot. Sprinkle Himalayan salt and garlic powder on the shrimp (I used frozen that I thawed in the fridge overnight, I didn’t really measure this just sprinkled to taste)
Add shrimp to the pan and let it get pink, add in the juice of 1/2 Lemon (save other half for garnish) and sprinkle more garlic powder and about 1 to 2 tsp of crushed red pepper (optional) next stir in 3 cups of plain greek yogurt and stir together. I also Sprinkled a little Old Bay seasoning to taste.
Use over pasta, rice or veggies. Personally I made mine over a easy frozen stir fry blend that was fast and really good with this dish.
