As with all my recipes they have to be FAST and easy because as a busy mom of 2 little ones I don’t have time to put together crazy recipes, this is so easy! You could make these for guests at a party or for your own lunch! Fix approved and a creative way to have Mexican inspired foods and still reach your health goals!
1 Serving = 1 Flat Bread Wrap
Ingredients:
- Whole Wheat Wrap
- Frozen or Fresh Organic Chicken Strips
- 3 tbsp. Fresh Salsa
- 1/4 Sliced Red Onion
- 2 Cups Fresh Spinach
- 1 – 2 tbsp. 0% or 1% Plain Greek Yogurt
- 1/2 Lime
- 1/2 tsp Chili Powder
For this one I took the wrap and layered spinach until it was covering the entire wrap. Then I sliced my onion and topped the spinach and topped with the fresh salsa. Stuck this in my toaster oven at 350 degrees while I sautéed the chicken, after about 7 minutes I switched it to toast and toasted for another 3 or so minutes (watch the wrap that it doesn’t burn, when the spinach is wilting its done) top with the chicken and slice the bread into squares. Add the juice of a half a lime to the top and garnish with the greek yogurt and chili powder. ENJOY!
