This recipe was just what I needed on this cold winter afternoon!!! And it is so easy to make and so GOOD.
Ingredients:
- 1/4 a Zucchini Sliced
- 1/4 of Summer Squash Sliced
- 1/2 a cup of chopped mushrooms
- 1 Red Container of sliced Chicken (I used a precooked chicken from Costco, you can use raw)
- 1 Red Container of Plan Greek Yogurt
- 1/4 sliced bell pepper
- 1/4 sliced onion
Combine all ingredients in a pan (use coconut oil or organic grass fed butter in the pan so it doesn’t stick) Sautee until golden brown, add to a bowl and top with greek yogurt, garnish with optional parsley and chili powder. I stirred this all together before I ate it and the greek yogurt made a really nice creamy sauce like consistency, almost like an alfredo! (almost! lol)
21 Day Fix: 2 Red, 2 Green (1 tsp if you count the oil in the pan)
